Spicy Radish, Apple, & Walnut Salad with a cool yogurt dressing..wonderful flavored salad
I love this salad and I wish more people would make more use of radishes.
Their crispy and peppery flavors add a kick to any dish, and are great served with just flaked sea salt as an appetizer.
This recipe serves 4-6
2 romaine or cos lettuces torn into bite sized pieces ( do not cut with a knife as this will oxidize them)
10-12 red radishes top and tailed (remove stems and roots) and cut into 1/4's
4 scallions minced
1/2 cup walnut pieces
1 medium ripe eating apple, cored and diced
1/2 cup raisins
1/2 cup chopped dates (optional)
1/2 cup chopped dried apricots (optional)
1 cup toasted/roasted nuts (unsalted)
1/2 cup minced parsley or cilantro
Combine everything together in a bowl in order given and toss well..dress just before serving.
Dressing:
1 cup plain live yogurt (do not use Greek/strained style)
1/4 cup lemon juice
1/4 cup honey, maple or agave syrup
4 tsp toasted sesame seeds (or 2tsp toasted sesame oil)
1/2 cup blue cheese or feta crumbled (optional)
blend everything together and dress the salad just before serving.
