I am posting this early so you can practice making this wonderful, quintessentially American, Cookie..even mistakes are delicious!!
2 1/2 cups all purpose flour (or 50:50 whole wheat and all purpose flours)
2 cups sugar (I prefer brown, packed)
1 cup butter
1 tsp salt
2 large eggs beaten
2tsp vanilla
1 tsp baking soda
3 cups quick cook (not instant) oatmeal
MIX the vanilla & eggs, and set aside.
Mix together the flour, baking soda, & salt and rub the butter in with hands to make "breadcrumbs".
Add the egg mix, sugar, oatmeal and combine to make a smooth dough.
Spread 2/3's (reserve 1/3 for topping later) into a greased 13x 9 x 2inch oven proof baking dish into a smooth layer...do not press down.
Set aside PREHEAT OVEN 350F MIDDLE SHELF
In a double boiler (or a basin over simmering water) melt
*16 ozs ( 1 1/4 bags) chocolate chips (milk, butterscotch or semi-sweet, your choice)
1 x14ozs can condensed milk
3 tbsp sweet butter
1/2 tsp salt
When thoroughly melted, pour over the dough layer, and top with 1 1/2 cups chopped nuts/broken pretzels/dried fruit (OPTIONAL)
Then top this with the 1/3 reserve dough, in pieces.
BAKE FOR 25-30 MINS until golden brown and cool in an on wire rack.
Cut into bars while warm..allow to cool completely before serving..you WILL HAVE TO MAKE MORE BATCHES OF THIS DELICIOUS COOKIE once the aroma wafts around and the neighbors figure out what you are making...lol
Store in an airtight container..if you dare!
Variations:
For a more grown up flavor add 1/4 cup rum,brandy or whisky to the melted chocolate mix.
In place of chopped nuts add unsweetened coconut flakes or shreds.
Instead of chopped dried fruit try this with sliced ripe banana or fresh raspberries and use semisweet chocolate chips ..very, very decadent.
You may use a lower calorie sweetened condensed milk but DO NOT USE EVAPORATED MILK.
Also real butter makes all the difference in this cookie
*I have added extra chocolate chips, to the original recipe as I love a gooey cookie, you can use just 12 ozs but why bother?
