Here are 2, VERY Green,Nutritional Powerhouse dishes using Greens
Vegetarian Radish and Spinach Greens with cream..simple & delicious
Serves 3-4
Tops from 2 bunches radishes, trimmed and washed well, drained (about 2 cups)
2 cups shredded spinach leaves
1 tbsp neutral oil
1 cup sour cream or plain live yogurt
sea salt & ground nutmeg to taste
Heat the oil in a heavy skillet and add the combined greens.
Cook quickly with a spatula turning over several times to wilt, then turn heat down to low and simmer for 5 mins tightly covered.
Using tongs, remove the greens to a warm serving dish.
Add cream to the pan, and off heat mix well to incorporate all the flavors, and add salt & ground nutmeg.
Pour over the greens and serve immediately..no need for pepper as the radish greens are spicy
Green vegetable sauce..makes 5 cups.
great to be eaten cold as a soup, or warmed as a soup, or with pasta, steamed vegetables, boiled potatoes, steamed brown rice & etc.
2 1/2 cups water
1 cup minced scallions
1 cup shredded romaine or escarole
1 cup shredded spinach
1 cup shredded beet tops or mustard greens, or chard tops, or kale
1 avocado pitted and flesh removed
1/2 cup minced parsley
1/4 cup minced fresh mint
1/3 cup chopped fresh basil leaves
1tbsp dried kelp
juice of 3 -4 limes OR 2-3 lemons
In a blender..add the water and scallions and blend until smooth.
at Low speed gradually add the romaine, spinach, beet greens, avocado, and herbs.
Season with kelp and lime juice..serve.
Keep chilled in a tightly lidded container in fridge, shake before using.
variations I also like this with cilantro instead of parsley
