Nutbutter Granola Chews..RECIPE NO-BAKE Energy Snacks
Excellent for quick energy, filling and nutritious..these are small nibbles as they are nutrition dense..wrap in waxed paper for lunch boxes or hikes.
1 cup honey
2 cups nut butter (if you have nut allergies try sunflower seed butter)
2tsp vanilla extract
1/2 cup unsweetened coconut flakes or shreds
1/2 cup sunflower seeds (hulled)
1/2 cup bran (wheat or oat)
1/4 cup sesame seeds
1/2 cup chopped raisins or dates( don't buy ready chopped as they are too dry & contain oat flour)
4 cups oatmeal (old fashioned are best & NOT Instant)
1/2 cup water
Cream honey and nut butter, add the vanilla and beat well.
Set aside
Mix the coconut, sunflower seeds, bran, sesame seeds, raisin/dates, then add to the honey mix.
Mix very well* then stir in the oats and water.
The mix should be moist & mold together, so in hot climes add 2 tbsp extra water if necessary.
Press into a buttered/greased 9x13x2 inch pan and cover with wax paper and plastic wrap and chill for 1-2 hours.
Cut into pieces & enjoy.
Wrap as candy in waxed paper for ON THE GO energy bars.
Variations:
add wheat germ, spices, nuts, poppy seeds, chocolate chips ..it's all up to you to make it YOUR OWN
For a nuttier taste try toasting the oats & cooling down, before adding.
* better to mix with a wooden spoon rather than a machine so you don't beat too much air in.
