COCONUT HAYSTACKS...great for teatime..RECIPE





These are very old fashioned British Tea Time Favorites and are also known as Coconut Buns

This recipe makes approx 24..depending on size

1+1/4 cups wholewheat flour
1+1/4 cups unsweetened shredded coconut
1 cup packed brown sugar 
2 sticks butter (8ozs)
 2 large eggs beaten



Preheat oven 375F middle shelf

Mix dry together in a bowl and rub in the butter, using hands.
With a fork, add the eggs and work well, mixing thoroughly.
Fork out rough heaps of the mixture (2 tbsp) onto a greased cookie sheet.
Bake 10- 15 mins until golden brown.
Remove from oven and wait 4 mins before transferring to wire rack

Variations: These can be either drizzled or dipped in melted chocolate when cold.
