Banana-Sweet Potato Pudding Dessert Fantastic all year Recipe.
Here is a really beautiful dessert and can be served any time of year.
Serves 4
2 ripe bananas, mashed
1 cup light cream
1/4 tsp sea salt
1/4 cup raisins
1 cup mashed, cooked fresh yams (best baked then peeled and mashed)
2tbsp brown sugar
2 egg yolks lightly beaten
Preheat Oven 300F
Combine all ingredients and mix well.
Turn into a well buttered deep baking dish or casserole.
Bake middle shelf for 45 mins or until set and browned on top.
Serve warm with more pouring cream or ice cream
