Apricot-coconut rolls. plus 3 other cookie fillings


Any kind of fruit preserve can be used I just love the sweet-tart flavor of apricot.

This should make 36 cookies

1 cup softened unsalted butter
1 cup thick, whole milk, plain, live yogurt (may also use sour cream...non-fat yogurt/sour cream will not work)
1/2 tsp salt
2 cups all purpose flour

1/2 cup shredded coconut ( don't use the sweetened stuff)
1/2 cup apricot preserves
1/4 cup finely chopped raw nuts ( pecans, walnuts almonds)

powdered sugar

In a large bowl and with either a stand or hand held electric mixer...
beat the butter until light and fluffy.
Gradually add the yogurt, and salt and mix well.
Gradually add the flour, mixing well after each addition.

Divide the dough into 4 parts and wrap in wax paper and chill overnight.

Next day. Pre heat oven 350F

Combine the apricot preserves, coconut and chopped nuts and mix well.

 remove the very tender dough one piece at a time for the fridge as you need them

Roll each one to 1/8th inch thick on a floured board..the dough will be very soft.
Cut the dough into 2 1/2 inch squares ( or larger)
Spread each square with 1/2 tsp coconut mix.
Starting at a corner, roll up each square, and moisten opposite edges and press to seal.
Place rolls seam side down on a greased/parchment lined cookie sheet.
repeat with remaining rolls and leave 2inches of space between the rolls.
Bake in middle oven 16-18 mins, or until tips are lightly browned.
remove from oven,  and remove from cookie sheet onto a wire rack.
Dust with powdered sugar.
Serve when cool.

These are sweet-crunchy, nutty tart and delicious.

Variations:

Chocolate cookies filled with fresh banana-coconut.
.add 2 tbsp unsweetened cocoa powder to basic dough mix.
In place of preserves use mashed fresh bananas, and coconut proceed as above recipe.

Coffee cookies filled with hazelnut-chocolate
add 3 tbsp. instant coffee powder to basic dough mix, spread with Nutella & chopped hazelnuts & raisins.

Raisins spice cookies..add 2 tsp. any ground spice of choice, ginger, nutmeg, cardamom, cinnamon to the basic dough mix.
Spread with raisins soaked in black tea over night, then drained and chopped, spread with cream cheese, top with chopped raisins, sprinkle with brown sugar, more ground spice and roll up.

Enjoy mixing up the nuts and preserves..these are wonderful cookies
