Tomato soup, Vegan Eggplant Moussaka, Chocolate and "Nut Butter" Fudge cake..Photographs and tips

The basic ( 80yr old  & somewhat revised by me) recipe for the chocolate fudge cake is on my blog dated Fed 2nd 2013.
For this cake today I have substituted the dark chocolate for 4 tbsp unsweetened cocoa and 3 tbsp roasted sunflower seed butter and you will understand why when you see the menu and finished cakes tomorrow.

 The menu for tomorrow is:

Green pea and avocado guacamole (recipe is on last year's blog) with whole wheat pita bread

Raw Vitality soups..nutritional yeast, sea veggies, avocado, cucumber, peppers, garlic, greens, orange & lemon juice, apple

Tomato-basil soup ( recipe is on my early blogs April-May 2012  Soup fit for a Prince)

Stuffed Mushrooms with cheese and herbs..photos tomorrow
with bulgur pilaf

Eggplant "Moussaka" with kasha ( buckwheat groats)

Roasted yams with broccoli orange & arugula salad

Desserts:
Eve's pudding with bosc pears, apples and plums

Chocolate-Roasted sunflower seed butter fudge cake..the sunflower seed butter is IN the cake and also the frosting in filling and topping

cooked kasha ( toasted buckwheat)

Par-boiled potatoes for the "moussaka"

Previous 2 the cake batter before baking

The "moussaka"  filling..cooked eggplant, thyme, oregano, potato, white squash, onions, garlic, tomato base..to be layered with cooked kasha and topped with a nut milk sauce flavored with thyme and nutmeg..baked at client's home

The cooked fruit for the Eve's pudding ( sponge cake topped..will complete tomorrow), plums, apples, bosc pears, pluots

The tomato-basil soup blended and topped with coconut milk

Previous 3 the baked chocolate cakes ( I doubled the original recipe) to be dried/cooled over night, then split and frosted with "nut butter" frosting, soaked in chocolate liqueur, then frosted and delivered to client

More photographs tomorrow morning before delivery..get cooking folks!
