Veggie burgers, Deep fried cauliflower, Lentil-cheese casserole, Lentil croquettes, Sweet corn Pie, Squash or yam pie, Delmonico Potatoes .RECIPES TO STRETCH THE DOLLAR



COST CUTTING!! - GREAT IDEAS FOR VEGETARIAN DISHES- RECIPES



A lot of folks are returning to school, college, or just got married, so here are some GREAT old fashioned recipes to help make your money go further without skimping on flavor.
Anyone of them can have extra veggies, grated cheese, fish or even cooked meat added to them..the recipes are "just the basics"...so feel free to make them your own.




Veggie (bean) burgers
1 1/2 cups baked beans ( or any cooked dried bean), drained & mashed.
1 medium onion grated or finely chopped
dash salt and ground black pepper
herbs as available( optional)
hot sauce as needed
1 cup all purpose or whole wheat flour
1  large egg beaten with 2tbsp water and 1 tbsp ketchup
1 cup bread or cracker crumbs

oil for frying

Mash the beans & mix in the onions, hot sauce and seasonings.
Shape into patties
Dip into the flour, then egg mixture then crumbs.
shake off excess and fry in hot oil, turning once, until golden brown.
Drain on wire rack/absorbent paper..serves 2-3





Deep fried cauliflower (any cooked vegetable will also do)

1 1/2 cups cooked cauliflower, cut into bite sized pieces

1/2 cup all purpose or whole wheat flour
1tbsp baking powder
1/4 tsp salt
dash ground nutmeg
1 large egg beaten
1/3 cup milk ( nut milk is fine)
juice 1 lemon

oil for deep frying


ketchup/vinegar/hot sauce for serving

Sift all the dry together, into a medium sized bowl.
Beat the egg into the milk then beat into the flour mix. Beat until well blended and no lumps.

Dip the cauliflower( cooked vegetables) in the fresh lemon juice shake off excess then dip into the batter,again allow excess to drain back into batter then carefully place into very hot  (375F) oil.
Cook until golden brown..do in small batches to avoid spilling the oil and causing a fire.

When golden remove and cool on wire rack/absorbent paper

serve with sauces or lemon wedges







Sweetcorn Pie
 serves 2


Preheat oven 400F
 
1 1/2 cups cooked corn or raw fresh kernels

2tbsp butter or margarine
1/2 medium onion finely chopped
1/2 green pepper finely chopped
2tbsp flour
1 bay leaf
3/4 cup milk or vegetable stock
3 egg yolks mixed with 2tbsp chopped parsley, 1 tsp Worcestershire sauce OR hot sauce, salt & pepper to taste
3 egg whites stiffly whipped
buttered breadcrumbs for topping ( fresh breadcrumbs fried in melted butter until golden, then removed from pan, do not drain).

melt butter in heavy bottomed saucepan and cook the onion and pepper until sweated off( 2 mins),add the bay leaf.
Add the flour and mix well, gradually stir in the milk and produce a thick sauce, do not boil.
remove from heat and allow to rest/cool for 20 mins.
remove bay leaf
Stir in the egg yolks and seasoning mix, and mix well, beating air into the sauce to cool down.
Add the corn, and mix well.
Gently fold in the whipped egg whites.
Turn into a buttered baking dish  and top with the buttered crumbs.
Bake on a cookie sheet middle shelf for 25 mins.
remove and serve at once

great with a simple green salad







Lentil croquettes..make 4 croquettes

1 1/2 cups cooked lentils
3 tbsp margarine or butter
4 tbsp flour
1 cup milk
1/2 tsp salt
pepper to taste
1 tsp Worcestershire sauce
dash cayenne or chili powder
1/2 cup fresh bread crumbs ( process or grate)
1 large egg beaten with 1 tbs water
flour and dried bread crumbs to coat the croquettes

oil for deep frying

melt butter in a heavy bottomed saucepan, stir in flour and then the milk, until smooth and thick.
do not boil.

Add seasonings, lentils, and the bread.
remove from heat and allow to cool.

When cool enough to handle.
Shape into 4 inch croquettes ( sausages or patties).
Roll in flour, then egg mix then crumbs, shaking off excess at every turn.
Deep fry in hot oil until golden brown.
remove from oil and drain..serve like a hamburger or hot dog





Squash or Yam pie  serves 2

Pre heat oven 350F

1 cup cooked mashed squash ( acorn, butternut)/or baked peeled yams

2 slices toasted bread soaked in milk until soft( this adds a nice nutty flavor to the dish)

2 large eggs slightly beaten

2 tbsp butter or margarine


1/4 cup finely chopped onion 

salt & pepper to taste

2 tbsp cream/1/2 & 1/2 or plain, whole milk yogurt

Drain the bread and mash with fingers then add to the mashed vegetable, mix well.
Add the eggs, melted butter, onion and salt and pepper and mix well, pour into a buttered shallow casserole.
Sprinkle top with the cream.
 Bake in middle oven 25 mins until golden brown.
remove and serve.





Delmonico Potatoes..named after ( & probably created by)  the famous 1920's & 30's restaurant of same name.

serves 2-3

Pre heat oven 350F

1 1/2 cups boiled, peeled and sliced potatoes

2 tbsp butter or margarine

1/4 chopped onion
2tbsp flour
salt and pepper to taste
3/4 cup milk
1/2 cup grated strong cheese ( Cheddar)
2 sliced hard boiled eggs
1 cup sliced, sauteed mushrooms ( optional)
1/2 cup buttered breadcrumbs (see previous recipes)

Melt butter in a saucepan & add the onions, saute 2 mins.
Add the flour and cook until smooth.
Gradually add the milk, stirring well to a smooth thick sauce.
Season 
Remove from heat.

Arrange the potato slices, hard boiled eggs, mushrooms, cheese and white sauce in layers in a  well buttered baking dish.
Top with breadcrumbs and bake, on a lined cookie sheet,  middle shelf 25-35 mins until golden brown and bubbly.
Remove from oven and wait 10 mins to serve to allow contents to settle.
