Greens and cheese soup, butternut & carrot soup, Cottage pie with cheese, Raisin-pecan oatmeal cookies..PHOTOS & PREP,


Topanga State Beach, CA. this morning 10am 
The weather is cooling down, thankfully and for the next few days it is going to be under 80F at the beaches.
With this in mind my client's have chosen some delicious cooler weather dishes ( yes I know we are spoiled in LA, in Lancashire, England, as a child, these temps were known as High Summer, sunbathing weather!).

Greens & cheese soup..I love this soup and have added cardamom pods and finished it with red wine.
For this soup I founds some great baby Brussels Sprouts, added carrots,onions, garlic, sweet corn and topped with fresh scallions and parsley
The cheese will be added to the soup at the client's home when it is heated and in the bowl.



The other soup is butternut squash and chunky vegetables, with coconut cream.
This may be blended but I like it chunky for more added texture.




A wonderful all vegetable Cottage Pie ( topped with "shingles' of par boiled  then peeled potatoes with grated cheese, sliced tomatoes)
The name comes from a Scottish pie named after a Crofters Cottage..which has peat or slate roofs, usually made w/ground beef or mutton w/veggies .
Similar to a Shepherd's pie but the potatoes are not mashed for this one.
Here is the filling, cooked which will now "marinate" in strong vegetable stock/gravy that they were cooked in, overnight before preparing into pies.


For dessert delicious all butter oatmeal raisin walnut cookies
