GLOBAL RECIPE:NEW POTATO & RAW VEGETABLE SALAD..NUTRITIONAL POWERHOUSE


 
This is best made when the new potatoes are in season, or when you can find some really good  small potatoes

It can also be made ahead ..just dress before serving

 

Makes 6 -8 delicious servings


3 pounds, small new WAXY potatoes, washed well and not peeled  (do not use potatoes that are starchy).

If you cannot find really small ones get medium sized and cut into bite size (approx 1 1/2 inches- 2inches)

2 sprigs mint
2 tsp sea salt
 boil until just  cooked, drain well.



Then add the following vegetables while the potatoes are warm, and mix well :

1 pound green string beans ends removed and well washed cut the same size of the potatoes 

3 ripe bell peppers sliced the same size of the potatoes

4 ribs celery cut same as peppers

2 cups freshly shucked and cut sweetcorn

4 scallions cut the same size as peppers

1 pound cooked dried beans (your choice), well drained


2 pounds small tomatoes (or cut into wedges large ones, core removed)

When ready to serve dress ( use half the dressing and serve the rest on the side for people to add more if they prefer) then add herbs last to prevent oxidization, from the dressing.


Dressing:
1 cup good olive oil
1 cup fresh squeezed lime/lemon/grapefruit OR orange juice (plus the zest)
2 tbsp good prepared mustard

2 tbsp good prepared horseradish sauce
2tbsp honey or agave syrup (optional)
3 cloves garlic smashed and finely minced
1/2 tsp sea salt
1/2 tsp ground black pepper
few dashes hot sauce (optional)

1 cup finely chopped/torn fresh herbs/greens (your choice)
chopped: parsley, cilantro, mint., chives, thyme, rosemary, oregano, marjoram
torn: basil leaves, arugula, radicchio, endive/chicory

Variations:
you may add:
lightly cooked & cooled carrots (the body breaks down more vitamins and minerals in COOKED carrots than raw)
boiled or poached eggs (on top when serving)
chunked or grated cheese (again when serving)
chopped pitted olives
Chopped rinsed and drained capers
Dried fruit ( raisins, apricots, cranberries & etc)
Fresh fruit ( when serving cut to the same size as the vegetables  apples, peaches, apricots, melon, banana, nectarines, plums, pluots)
Raw nuts.( if almonds soak overnight in fresh water and drain well before adding to salad to remove natural toxins from skins)


Natural Sea Salt is "sweeter" than regular rock salt, so you get to taste the whole dish without salty undertones
