Green Minestrone Soup, Eggplant Parmesan, Sicilian style roasted vegetables, Tuscan roasted butternut squash ragout with gnocchi, mixed greens with garlic, baked zucchini with celery, Orange cake, Fennel-jumbo raisin breads..the full menu Labor Day 2013 in Photos



Tomato-free but vegetable packed, Green Minestrone, Minestrone originally featured whatever vegetables were growing at the time, and  did not always consist of a tomato base.



Vegan baked zucchini with layers of tomato sauce, pecans and celery..to be baked at client's home

3 cheese eggplant Parmesan, layers of baked eggplant with Mozzarella,Parmesan and Cheddar cheeses and a rich tomato sauce..also to be baked at Client's home


Previous 2 some the vegetables-fruits to be roasted

wholewheat and white gnocchi to be cooked at client's home (add to boiling salted water when they float to surface they are cooked)

Turnip greens with red onion, garlic and balsamic vinegar




Previous 4 the Sicilian Style roasted vegetables to be served with the grapefruit-onion salad..the vegetables are sweet potatoes, yams, baby white potatoes, mini sweet peppers, white Mexican Squash, red onion, carrots, and tomatoes and dappled pluots..roasted on one side only as they are to be reheated at client's home, and finished with fresh lemon juice ( as 2/3 's my clients are on low salt diets and lemon juice also cuts the richness of this dish)
