1960'S RECIPES APPLE-RUM PIE; MAYONNAISE DRESSINGS; CANDIED YAMS; SLAW DRESSING; FROZEN CREAM CHEESE;the original GINGERBREAD MEN/HOLIDAY SHAPED COOKIES

here are some great recipes from the swinging American '60's..enjoy the amazing GOOD LIFE

APPLE-RUM PIE

serves 6

3/4 cup all purpose flour
1 cup sugar
1tsp salt
3 3/4 cups milk
4 large eggs beaten
1/4 cup rum
4 tbsp butter


3 cups apples cored and thinly sliced
ground  ginger

powdered sugar
1 cup apricot jam


Pastry for 1 9inch spring form cake pan

1 cup all purpose flour
2 tbsp sugar
1/8th tsp salt
4 tbsp butter
1 egg yolk


Sift flour, sugar and salt into a mixing bowl, cut in butter.
Add the egg yolk and mix well.
Shape into a ball and rest it for 20 mins.

then place between 2 sheets waxed paper and roll into a 9inch circle.
Place into the bottom of a 9inch spring form pan.



For the filling:

Combine the flour, salt and sugar in a double boiler, over hot water.
Add the milk, whisking until well blended.
Cook constantly whisking until it thickens.
Cover and cook a further 10 mins.
Add 1 tbsp mixture to the beaten eggs, mix well then add the egg mix to the double boiler.
Cook 2-3 mins, then remove from heat and add the rum and butter.

pour into the pastry, and smooth the surface.
Preheat oven 350F

lay apple slices overlapping around top of the filled pan.
sprinkle generously with powdered sugar and ginger

Bake 45 mins middle oven ..until apple is tender.

remove from oven and spread with the warmed jam.

let cool and then chill

remove from pan and cut into wedges, serve with whipped cream.







Mayonnaise Dressings for fruit and vegetable salads:


AVOCADO MAYONNAISE:
2/3 cup mashed avocados
1/2 tsp salt
1 tbsp lemon juice
1/4 tsp hot sauce
3 tbsp mayonnaise
1 tbsp minced parsley/or scallions

Mix everything well together  serve with :
sliced tomatoes, cucumbers, and citrus salads

CUCUMBER MAYONNAISE
1 cup mayonnaise
1/2 cup chopped cucumbers
1 tsp lemon juice
1 tbsp minced scallions
1 tbsp minced fresh mint

mix well..great with green salads 

GREEN MAYONNAISE
1 cup mayonnaise
1 cup chopped steamed spinach..drain well
1/2 cup minced parsley
6 grated radish/ 3 inches daikon ( optional)

mix well and serve

HONEY-LIME MAYONNAISE
great with pineapple or fresh mango
1 cup mayonnaise
2 tbsp honey
2 tbsp fresh lime juice
1/2 cup heavy cream
1 tbsp grated lime zest

whip cream and fold into mayonnaise and add everything else, serve at once.

LEMON-CREAM MAYONNAISE
juice 1 lemon
1 cup mayonnaise
3 tbsp whipped cream
1 tsp grated lemon zest
fold everything together and serve immediately

SLAW DRESSINGS:

GINGER-CREAM
1 CUP MAYONNAISE
1 TSP LEMON JUICE
1/2 TSP SALT
2 INCHES GINGER GRATED

Mix well and serve in slaws


CREAMY-CELERY SEED
1 cup sour cream
2 tbsp lemon juice
1 tsp sugar
1 tbsp celery seeds

mix well and serve in slaws


YOGURT SALAD DRESSING
1/2 cup minced scallions
1 clove garlic smashed and minced
1/2 cup chopped celery leaves
1 cup minced parsley
1 tsp salt
2 tsp sugar
1 x10 oz yogurt plain live
2 tbsp Dijon mustard

Mix well and serve in slaws



CANDIED SWEET POTATOES

8  Sweet potatoes (4 cups)
1/4 cup butter
1 cup packed brown sugar
2 tbsp honey
1 tsp grated Orange peel
1/2 cup orange juice

serves 6-8

preheat oven 375f

wash and peel the sweet potatoes.
cut in 1/4 inch slices and brown well in a skillet in the butter.
Put into a 2qt baking dish and sprinkle with sugar.
Add honey, juice &  peel
bake middle oven for 30 mins, covered.
Uncover and continue baking for 20-30 mins until potatoes are tender ..basting for last 20 mins.




FROZEN CREAM CHEESE..this is made in ice trays in freezer..as no one had home ice cream makers in the 60's

1 x 8ozs softened cream cheese
2/3 cup condensed milk
1/2 cup water
1/8tsp salt
1 1/2 tsp vanilla extract
1 cup heavy cream..whipped


Combine the cream cheese with water, milk and salt. In a large bowl using an electric mixer/or whisk
add the vanilla, beat until smooth then chill in fridge.

When the cheese mix is very cold, add the whipped cream and turn into a freezer tray..freeze for 1 hour  or until 1 inch from edge is frozen.
Remove from freezer and place in a medium bowl and beat until smooth but not melted.
Return back to freezer in a tray and freeze for another hour until firm enough to spoon out.
serve with fresh berries
SERVES 4


 THE ORIGINAL:
GINGERBREAD MEN/HOLIDAY SHAPED COOKIES

make 24-36 depending on size

3 cups all purpose flour ( or 50:50 with wholewheat)
1/2 tsp baking soda
1/2 tsp each:
ground ginger, cinnamon, cloves, mace, 
1/4 tsp salt
1/2 cup margarine
1/2 cup packed brown sugar
1 large egg beaten
1/2 cup molasses
1 1/2 tsp vinegar

raisins for decoration
 
Mix all dry ingredients together in a bowl
In another bowl cream the butter and sugar, add the egg and beat well.
Fold in the molasses and vinegar.
add the dry ingredients, and mix to lightly blend.
Remove and wrap in waxed paper  &  chill overnight .

Next day preheat oven 350F

Lightly dust cookie sheets with flour

roll out dough to 1/8th inch thick.
Cut into desired shapes..for gingerbread men use raisins for eyes buttons etc.
Bake 10 mins middle oven

Remove with a spatula to wire racks and cool completely..these may be hung on Christmas tree OR USED TO MAKE A GINGERBREAD HOUSE too!
