Corn Chowder; Green Minestrone with brown rice; Smoked Eggplant dip; Gluten-free Lasagna; Samosa Vegetable Pies; Cashew Paella; Double chocolate chip oatmeal cookies; Sunflower seeds sour dought breads and own sun dried currant sourdough rolls..Photos of prep so far



Here it is still low 80f's and cool nights so I took some photos of a local street that has imported maples to show some Fall Color.

The menu for tomorrow (Veterans Day USA) is an international one of vegan and vegetarian dishes:

Vegetable-Corn chowder..this is vegan made with coconut milk

I prefer not to thicken my chowders..so that the Fresh  flavors shine through more..if you wish to have a thicker version, thicken with cornstarch or arrowroot, mixed with coconut cream just before serving and bring to high simmer low boil to thicken: Potatoes, celery, carrots, onions, sweetcorn, vegetable stock.


Green Minestrone with brown rice..I add the steamed brown rice after it has cooked so it doesn't soak up all the stock.
Also as I prefer my vegetables a little crisp this works as steaming brown rice takes twice as long as reg  white rice and the veggies would be overcooked.



Green beans, carrots, celery, basil, olive oil, onions, garlic, zucchini, green peas in a very strong vegetable broth. This soup is also vegan.



Fire roasted eggplant and black bean dip..this is salt free for a client and instead I am using more lemon juice, garlic,paprika with tahini and olive oil.
To be served with toasted pita breads at the clients home.

Gluten-free Vegetarian lasagnas...these use roasted eggplant and steamed zucchini in place of pasta. With a homemade mushroom-tomato sauce and mozzarella cheese (low salt).

I am making some samosa Vegetables into pies.
potatoes, onions, carrots, green peas, Brussel's sprouts and cooked black beans in a curry-turmeric-ground coriander sauce.
To be topped with steamed red potato slices, and sliced own grown tomatoes.
very different and very delicious and all Vegan. Photo above is marinating will add the cooked beans tomorrow.

Roasted Cashew paella..this is very popular and also totally vegan this time I am adding some turmeric cooked chickpeas, tomatoes, garlic, onions,  peas, sweetcorn, red bell peppers, black olives and  steamed rice with smoked paprika.
This is one of my favorites and  again is totally Vegan



The cookies are double-chocolate, oatmeal, sunflower seed


There are 2 breads this week, one  a wholewheat sourdough with sunflower seeds and the other is my own, local grown, organic, sun dried currants* and cinnamon, sourdough  rolls (*it takes 3 weeks to sundry them, and they remain somewhat soft and incredibly sweet)





I am waiting to bake the breads and will post more photos tomorrow.
