Celebrating The Mexican Revolution tomorrow...Back beans wiht tortillas sour cream and lettuce, tomato-pepper based enchiladas with cheese; Carrot & squash soup. Guacamole with tortilla chips.PHOTOS





Glorious day today, and still no rain.
It's been low 70's all afternoon and very sunny and I am just giving my caraway whole wheat sour dough breads another 1 hour to prove before molding into the pans.
tomorrow I will assemble and pack and post more photos.
here is my progress so far:

Castillo Squash

Carrot & Zucchini soup blended with coconut cream

The fresh vegetable mix for the enchiladas..squash, yams, carrots, onions, garlic, tomatoes,celery,  sweetcorn, will be topped with grated cheese.



The same mix with the addition of black beans and cooked down for the tortillas and served with sour cream & lettuce

Cinnamon-raisin oatmeal cookies
