Almond-apricot couscous salad.: Vegan deliciousness PHOTOS AND TIPS

Saute onions in 1 tbsp grape seed oil and add carrots, simmer in a little stock, then add soaked almonds, cooked pinto beans, ground cumin, grape tomatoes, and peas. Cook 5 mins on high and then add 1/2 cup chopped dried apricots. To be heated at client's home and will top the whole wheat couscous (below)




Steamed whole wheat couscous the dish will be dressed with an extra virgin olive oil & lemon juice
