Potato Pie RECIPES - English over 150yrs old - can be converted to Vegan easily




Growing up in the North of England in the 50's every Friday these pies were popular with all church folk who still believed in meatless Fridays.
They were also known as butter pies

serves 2-3
pastry:

2 cup all purpose flour
6 tbsp butter
1/4tsp salt
2 tsp baking powder
water to mix.

mix the dry and rub the butter in 'to breadcrumbs".
Add very cold water by the spoonful to mix to a somewhat dry pastry
Mix to form 2  square shapes and allow to rest
Allow to rest for 30 mins before rolling out
this makes 2 pie crusts


Preheat oven 350F

in a greased 8x 8 inch pan
roll out 1 of the pasty squares to the fit ..just 1 inch over the pan's edge
peel and slice ( 1/4 inch) raw starchy potatoes and cover the pastry with one layer.
Add salt & pepper and 2-3 tbsp butter.
roll out the second piece of dough and cover the potatoes, crimping the edges to seal.
Bake in middle oven until golden brown

variation: you may add grated cheese or tomatoes on top of the potatoes & etc.

PREHEAT OVEN 350F
serves 4

in a greased casserole dish

layer 2 pounds peeled and 1/4 inch sliced potatoes with 3 medium onions, finely chopped..make 2 or 3 layers.
season with salt and pepper.
Just Cover with water and bake in oven until water evaporates 30-45mins.
Top with milk and 1 rolled out pie crust.
return to oven and bake until the crust is golden brown

serve hot

variation  use vegetable stock in place of water, add cooked vegetables of choice.
