Gluten-Free & Vegan DOSAS Fried Pancakes-breads RECIPE & PHOTOS








I have to admit these are one of my favorite pancakes, they are just made from lentils, brown rice, water and spices.
Sometimes like these, with grated ginger root and chopped cilantro, other times with black caraway seeds and turmeric.

The are dairy free, egg free and really good. They have the flavor of stuffed grape leaves..and they do take along time to prepare.They are ONLY made with a natural ferment using organisms present naturally in  the lentils and rice.

This mix should  yield 12 large or 24 small pancakes

2 cups brown rice
1 cup lentils ( also use red lentils, Lima beans & etc.)


Soak the rice and lentils together after being well washed and drained, in a large crockery pot ( not metal), covered in fresh cold water..leave for 24 hours.

Drain, wash in running water then drain again..then grind/blend to smooth batter with 1 cup filtered water..place in a large glass/pottery bowl (I use 1 gallon glass jars) with twice the volume spare, for the batter to rise.

The batter should be just pourable and might need some extra water at this point.
Cover and  allow it to ferment in a cool warm place for 5-7 days...everyday stir it to mix the top into the rest. ...it is important to cover with a clean cloth ..do not use foil or cling wrap as the air has to circulate but has to keep insects and dirt out.

To make the pancakes:

Stir well to mix everything together then add, 1/2 cup filtered water
1/2 cup chopped parsley or cilantro. 
1-2 tsp salt
2 tsp ground turmeric 
and 2 inches grated ginger.
Mix well.

In a large, very hot, non-stick/well seasoned pan..add 2 tbsp grape seed or peanut oil ( does not break down at high temps.) enough batter by ladle to make a 3 inch pancake...cook on one side until bubbles appear on surface..then flip over and cook other side for 2-3 mins.
The pancakes should be no thicker than 1/4 inch..or they will be doughy ..thinner ones are the norm.

Lightly oil the pan between frying  and fry at very high temps.....otherwise the pancake will soak up the oil.
Cool on wire racks and cover with clean cloths..the turmeric will stain any cloth so better to use clean older ones.

Serve warm with plain yogurt, stews, curries, & etc.

Variations:
add black caraway seeds,  cumin seeds, fennel seeds, celery seeds, poppy seeds, black cardamon seeds, chopped scallions.
