Almond-Rice Cookies & Sesame Chews Gluten-Free..For Linda B




 Almond-Rice cookies

this makes  soft and delicate flavored cookies

PREHEAT OVEN 325F

1 cup softened butter
1/2 cup honey
2 large eggs beaten
1 1/2 tsp almond extract
2 cups rice flour
2 cups finely chopped raw almonds..roasted no salt  almonds also add a deeper flavor to the cookies..your choice

Beat the butter and honey  together add the eggs and extract, continue beating.
In another bowl add the flour and nuts and mix well, add this to the wet mixture, and mix well.
Using a tsp scoop small mounds and place on parchment lined/or greased cookie sheet..2 inches apart

bake 12 -15 mins middle oven

Remove and cool on the cookie sheet on a wire rack before carefully removing.

this should make 24 cookies


Sesame Chews

PREHEAT OVEN 350F

use a shallow pan either  4 x4 inch, 6 x6 inch or 8 inch round

1/2 cup honey
3/4 cup crunchy nut butter (roasted and salted kind)
Mix these 2 well to combine and place bowl in oven so they melt together..approx 15mins.

1 cup sesame seeds (raw)..toast on a separate cookie sheet for 15 mins then mix with 1/2 cup milk powder
3tbsp water

Combine this with the honey nut butter mix, and stir well to produce a fudge-like consistency adding a little more water as needed.

Lightly oil the pan or tray, pour into the pan and smooth with an oiled rolling pin/or roll out on a an oiled cookie tray with an oiled rolling pin and place in tray.

Top with 3-4 tbsp chopped nuts or shredded coconut.
refrigerate for 4 hours

cut into 12 - 16 crunchy pieces

* variations may add 1 tsp vanilla, almond or coconut extract..add when mixing the 2 mixes together
