Vegan, Low Fat, Moroccan Harira..robust legumes, rice and tomato soup/stew; plus Potato- Squash Soup, Plus Hearty Greens and beans soup...RECIPES FOR COOLER CLIMES






The weather here is changing now by the hour, and it is already 10 degrees cooler than yesterday.
This weekend the local mountains were sweltering, by Wednesday they could be welcoming their first of the season snow, as a very cold storm from Alaska is headed our way, and we by the coast have been promised some long awaited rain!

With this in mind I present to you my own version of Harira..a Moroccan Thick stew/soup that is normally made with lamb, eggs and flour and is popular after the Ramadan Fasts.


I have made mine without the added flour, oil nor the egg, as it is packed with so many vegetables that,  I feel would be "just gilding the lily". Each bowl really can be eaten as a meal, with some crusty wholewheat bread and maybe some cheese or salad on the side.

Hearty and very comforting with hints of cinnamon and coriander..garnish with fresh chopped cilantro and serve with wedges of lemon..a feast.
