CANDY APPLE CAKE; BUTTERSCOTCH POUND CAKE with Pecan Frosting...great for anyday of the week!



CANDY APPLE CAKE

This is a great  old recipe from Alabama, USA

13 x 9 x 2 inch oven proof baking dish or deep cake pan oiled
Preheat oven 350F

2 cups packed brown sugar
1 1 /4 cups sunflower seed oil
Cream together the oil and sugar
Until light and sugar is dissolved.

Gradually add 3 beaten large eggs

2 tsp vanilla extract

In a large bowl mix together well, 
3 cups all purpose flour ( if using whole wheat add an extra 4 tbsp milk)
3 cups  ripe apples cored and chopped (1/4 inch dice)
1 tsp baking soda
1 cup chopped walnuts or pecans

Fold in the oil mix and 
1/3 cup milk

bake in middle oven for 1hour

Remove from oven and pour on hot toffee topping:
1/4 cup milk
1/2 cup butter
1 cup light brown sugar
1 tsp vanilla extract
place in a saucepan and boil  for 5 mins.

Cool in pan on a wire rack..cut when cool.





BUTTERSCOTCH POUND CAKE WITH PECAN FROSTING

THIS RECIPE IS FROM MOBILE, ALABAMA

PREHEAT OVEN 300F

1/2 cup butter
1/4 cup vegetable shortening
2 cups brown sugar packed
1 cup cane sugar
Cream together until light and fluffy in a stand mixer

Beat in 5 large eggs, one at a time and scrape down the bowl..mix very well (it is OK if the mix curdles).

in a measuring jug:
1 cup milk
2 tsp vanilla extract

In a medium sized bowl, sifted together:
3 1/2 cups all purpose flour ( do not sift wholewheat..again if using wholewheat add 4 extra tbsp milk))
1 tsp baking powder
1/2 tsp salt

Fold in the dry and the wet to the sugar mix, beginning and ending with the flour, beating as you add.
Scrape down the bowl and mix one final time

Pour the batter in greased and floured loaf pans  and bake middle oven 1 - 1/2 hours depending on size of pan..until wooden toothpick comes out clean.

remove from pans and cool on wire.
When cold enough frost:

Frosting:
1 1/2 stick butter/3/4 cup
1 tsp vanilla extract
1 1/2 pounds powdered sugar
beat together then add nuts and enough milk to make a spreadable frosting
2 cups cold  toasted pecans (toast in 2 tbsp butter on a cookie sheet at 400f)
