1 tsp salt
2 tbsp ACTIVE dried yeast
1 tbsp honey or maple syrup
1 1/2 cups warm milk
1/3 cup sunflower seed oil
2 large eggs beaten

1 cup onions finely chopped, sauteed in a little oil until opaque, cool
1 x 4ozs can chopped green chilies drained
In a  large bowl combine 3 cups whole wheat flour, 2 cups bread flour, the bran flakes, salt. Mix well to incorporate air.
Add the yeast to the warm milk and honey in a bowl and wait until it gets frothy, then add to the flour mix along with the eggs, oil and water...stir well ( use Stand mixer for this).
Gradually add the cooked onions, chilies and cheese..adding any extra bread flour to make a stiff dough.
Put onto a wooden board or clean counter top and knead the dough for about 5 mins..stretching the gluten..DO NOT DO THIS IN ANY MACHINE.
PLACE IN A LIGHTLY OILED AND FLOURED BOWL..BRUSH THE DOUGH WITH A LITTLE EXTRA OIL AND COVER WITH A CLOTH.
LET RISE TO DOUBLE IN A WARM NOT HOT PLACE. ( APPROX 1 HOUR)
Punch down, then shape the dough into 4 equal pieces, and form into loaves of choice,  & place ON a greased cookie sheet or put into greased loaf pans..let rise to double a second time in a warm place
Now preheat oven 400f
when the loaves are double sized, place in middle oven and bake for 15 mins..cool on a wire, not on sheet.
